“Girthday” Cake

“Girthday” Cake

This is ideal for special occasions like birthdays so even the Gerson person can have a treat. Also known as GERSON APPLE SPICE CAKE from “The Gerson Handbook”.

You’ll need:

  • 1/4 cup honey or maple syrup
  • 1 cup fresh applesauce
  • 1 1⁄2 cups oat flour
  • 3/4 cup whole wheat flour or triticale flour 3/4 cup crude brown sugar
  • Pinch allspice
  • Pinch mace
  • 1/4 teaspoon ground coriander
  • 2 cups raisins or chopped dates
  • 1 teaspoon featherweight sodium free baking powder (optional) This is a potassium based baking
  • powder. If you are a cancer patient, check with your physician first.

Crumb Topping:

  • 2/3 cup rolled oats
  • 1/3 cup maple syrup or honey Pinch allspice
  • Pinch mace

Method

  1. Combine wet and sifted dry ingredients.
  2. Then add raisins or chopped dates
  3. Pour into oblong baking pan lined with baking paper or dusted with rolled
    oats/flour.
  4. To make topping, buzz oats briefly in blender to make a finer blend. Mix
    spices with oats. Mix in enough sweetener to make a crumbly mixture.
  5. Sprinkle crumb topping on top.
  6. Bake at 325°F (160°C) degrees for 40 minutes or until cake tests done (until a
    knife comes out clean).
  7. Serve with a spoonful of fresh apple sauce or non-fat yogurt (ifallowed).

Frittata Gerson Therapy Style

Frittata Gerson Therapy Style

No eggs of course! This is an easy ‘chuck it all together’ country style meal. Good one for entertaining with friends. Even your non – Gerson friends will drool over it. You will NEED a food processor or a slicer thingo though.

You’ll need:

  • 4 potatoes
  • 3 tomatoes
  • 1 zucchini
  • 1/2 onion
  • Fresh parsley
  • 1/4 cup non-fat yogurt

Method

  1. In a food processor slice all veggies. Roughly chop parsley.
  2. Mix in non-fat yogurt.
  3. Line a loaf pan generously with baking paper. Spoon in veggies.
  4. Bake for 45 minutes in oven set to 300°F (150°C) or until cooked (knife goes through easily) and brown on top.
  5. Pull out of tin by paper and serve while still in paper on a board or large plate.

A non-fat yogurt allowance is only added after several weeks on Gerson Therapy and when recommended by your practitioner.

Crunchy Tangy Potato Salad

Crunchy Tangy Potato Salad

Warning: Don’t mix this up to serve it! Looks disgusting mixed up. But tastes amazing!

You’ll need;

  • Cold potatoes chopped
  • Mint chopped
  • Celery sliced
  • Grapefruit and cilantro dressing (or your favorite) Cherry tomatoes (whole)
  • Drained non-fat yogurt (generous scoop)
  • Garnish (very important!) of tomato and sprig of mint

Method

  1. Place ingredients into a dish in the order listed.

IMPORTANT: A non-fat yogurt allowance is only added after several weeks on Gerson Therapy and when recommended by your practitioner.

Smashed Easy Veg

Smashed Easy Veg

Smashing veggies is really just a modern way of lazy mashing! A country chunky texture is the result.

You’ll need:

  • Cauliflower
  • Pumpkin (Jap if available)
  • One tomato
  • Potatoes

Method

  1. Place cauliflower pieces, sliced pumpkin (with peel on), thickly sliced potatoes and the tomato (whole) on baking paper.
  2. Cook for 1 hour 15 minutes on 350°F (180°C).
  3. Smash’ cauliflower, pumpkin and tomato together. Be careful as the tomato juices are hot and can splatter.
  4. Serve with drained non-fat yogurt.

Lettuce Wrap

Lettuce Wrap

Serve with a serve of Gerson Wedges and your friends will be saying… “I’ll have what she’s having!”

You’ll need:

  • Two large cos lettuce leaves
  • Drained low-fat yogurt (optional if allowed)
  • Your favorite salad
  • Your favorite dressing
  • Cling wrap (Yes I know it’s plastic but it’s not on there for long. Just doesn’t work well with baking paper.)

Method

  1. First place a large sheet of wrap over a plate. Put the lettuce leaves on wrap side by side making sure some sticks out on top (where you’ll bite into it) and that there is plenty of excess at the bottom.
  2. Spread with yogurt (optional) then salad and dressing.
  3. Fold over the wrap from the side first, rolling up lettuce as you go. Then with other hand fold up bottom (this will catch all the yummy juices). Finally fold over other side.
  4. Serve with potatoes and soup. Make sure you have a napkin handy. A pile of them!
